In the past few weeks, there has been much speculation about miracle cures for COVID-19. However, as it is a newly discovered virus, its forms of prevention and treatment are still being studied. So far, we know that individuals with a strengthened immune system are more resistant to infections, which increases the chances of recovery in case of contamination. So many people are betting on the power of vitamin D for increased immunity.   

 

A vitamin D as an important ally

It is a fat-soluble nutrient (which dissolves in fat and oil), recognized for its important role in the absorption of calcium and phosphorus in our body, which are essential elements for the health of bones, muscles and teeth. In addition, this substance acts in the prevention of diseases such as osteoporosis and in the control of weight and hypertension. And now, researchers are studying whether the vitamin D can help fight coronavirus.

In a recent study, scientists at the University of Turin in Italy pointed out the importance of the nutrient for the regulation of the immune system. According to them, the lack of vitamin D it is frequent in hospitalized patients due to COVID-19. Another study, this time from Northwestern University, in the United States, concluded that, in countries with the highest mortality rates from the disease, fatal patients had lower levels of the vitamin when compared to victims who resisted the virus better. 

Thus, there is still insufficient scientific evidence to prove the link between vitamin D and contagion with the new virus. But there is already some evidence about the relevance of this substance in fighting infections. In addition, even if its effectiveness in combating COVID-19 has not yet been proven, ensuring adequate levels of vitamin D it is always essential for the proper functioning of the organism.

 

But, after all, how can we get the vitamin D?

This substance can be absorbed by exposure to sunlight and the ingestion of some types of food. In addition, people with a deficiency of the nutrient can acquire it through supplementation, but under medical supervision. 

Exposure to sunlight

Sun exposure is the main source of obtaining vitamin D. After all, type B ultraviolet rays (UVB) are responsible for activating the cutaneous synthesis of this substance in the body. And this synthesis is responsible for 90% of obtaining the nutrient. 

You must be wondering if exposure to sunlight is not harmful to the skin, is it not? To avoid damage, the Brazilian Society of Dermatology indicates that moderate exposure - 5 to 10 minutes daily - is sufficient to synthesize the vitamin D. So, during social distance, look for a spot that is sunny in your home to ensure your daily dose of health.

Intake of foods rich in vitamin D

Although they represent a small percentage in obtaining vitamin D (10%), some foods are able to provide the nutrient to our body. Among them, fatty fish (such as salmon, tuna, mackerel, herring and sardines), animal liver, eggs, milk, cheese and mushrooms are sources of this vitamin. However, it is worth mentioning that, due to the cholesterol content, they should be consumed sparingly.

Salmon with cheese filling

Ingredients 

  • 4 salmon fillets
  • 200g of mozzarella cheese
  • 200g of provolone cheese in pieces 
  • Juice of 2 oranges
  • Salt and spices to taste 

Preparation

First, make a cut in the middle of each piece of salmon. Add the cheeses inside them, close them with toothpicks and place them on a piece of aluminum paper. In a container, mix the spices, salt and orange juice. Then, drizzle the fillets with this mixture and wrap them in aluminum foil. Then, place the fillets in a pan and place in a preheated oven, at medium temperature, for approximately 25 minutes. And ready! Now just remove the foil and serve at will.

 

Pancake with mushroom filling 

Ingredients

Sponge:

  • 1 and ¼ cup (tea) of wheat flour
  • 1 and ¼ cup (tea) of milk
  • 2 eggs
  • 2 tablespoons of melted butter
  • 1 pinch of salt

Filling:

  • 600g of chopped assorted mushrooms
  • 2 tablespoons of melted butter
  • 2 tablespoons butter 
  • 1 chopped onion
  • 1 lemon juice 
  • 1 jar of plain yogurt
  • Salt and spices to taste

Preparation

In a bowl, mix the dough ingredients. Cover the container with plastic film and let it rest for 20 minutes at room temperature. Then, grease a non-stick frying pan with a drizzle of olive oil or butter, and form discs with the dough. Reserve.

In a saucepan, heat the butter and sauté the onion until it begins to brown. Add the mushrooms and cook until they are tender. Then add the salt and spices and drain the liquid that has formed. Finally, add the yogurt to the mushrooms and mix. 

Now, just fill the dough discs, form bundles and arrange them in a greased form. Drizzle the pancakes with melted butter and bake in a preheated oven at medium temperature for about 15 minutes. Enjoy your food!

 

Some scientists are studying the relationship between vitamin D and the fight against coronavirus. Although the effectiveness of this substance, for this purpose, has not yet been scientifically proven, there are already some indications.
